Zeera Chicken Handi

This dish is very Different from regular chicken this zeera chicken handi is made with green chili, lots of roasted cumin, yogurt and cream to make a rich gravy better had with paratha  naan. this recipes about a combination of leftover items in fridge and experimenting with favorite ingredients hoping for magic happen this particular curry chicken recipe also known as bhuna Zeera to keep updated with new recipes follow me.

Ingredients


  • 4 tablespoons oil
  • 1 small onion chopped
  • 300 grams boneless chicken cubed
  • 1 green chili
  • 2 tablespoons fresh coriander
  • Salt   to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon roasted cumin powder  for garnish
  • ½ cup yogurt
  • ¼ cup cream

Instructions


  1. Heat oil fry onions till brown. 
  2. Drain them in colander once dry and then crush with your hands set it aside.
  3. Place the green chilies and coriander in blender then pulse till  paste is formed. 
  4. Alternatively put them in mortar and pestle just bash a few times till thick paste formed and then add water if required.
  5. Heat 2 tablespoons of leftover oil from frying onions and add ginger garlic paste by followed the chicken and cook it till golden..

  6. Add green chili paste and yogurt, salt, roasted cumin powder and black pepper stir together and then cook on low heat till chicken is cooked then add crushed onions.
  7.  At last add cream, and mix it well  take off and serve hot with paratha.
  8. Garnish with sliced green chilies and roasted cumin powder.

Q. How to make roasted cumin seeds?
A.

       Place cumin seeds on frying pan dry well roast on low heat only for 2 minutes move the pan around so the cumin seeds don’t burn and then take off the heat and place in spice grinder and ground well into coarse powder and pour the roasted ground cumin seeds into air tight bottle it will last for couple of months in spice cabinet.
