What is Fish and vegetable stir fry?

Fish and vegetable stir fry basically Chinese style dish it's made with one teaspoon  oil! Fish and vegetable stir fry healthy and delicious dish perfect for dinner and also prepped for lunch during a week. I have started experimenting with the past few days in a Desi style what I usually boneless fish fillets. No bones clean and super simple to use for a beginner. Fish and vegetable stir fry dish mixed vegetables stir fry and something that I love for dinner at home for office lunches for picnic with  Asian style sauce. I use minimal oil and lots of vegetables serve with  brown rice. In fact, I have also eaten it with a light salad.


Ingredients



  • 5 tablespoon soy sauce
  • 2 tablespoon vinegar
  • 2 tablespoon honey
  • 4 tablespoon sweet chili sauce
  • 1 teaspoon sriracha
  • ¼ teaspoon sesame oil
  • ¼ - ½ teaspoon red chili flakes adjust to taste
  • ½ teaspoon salt

For the fish


  • 2 garlic cloves sliced
  • 1 teaspoon olive oil
  • 500 grams fish fillets sliced
  • 1 teaspoon garlic paste
  • ½ teaspoon red chili powder
  • ½ teaspoon salt adjust to taste
  • ½ cup red capsicum
  • 2 cups frozen vegetables carrots, green beans, broccoli and water chestnuts
  • ½ - ¾ cup chicken stock
  • 2 teaspoon cornstarch optional
  • 1 cup quinoa, rice or brown rice to serve

Instructions


  1. Add all marinade ingredients in a small jar, with 1 garlic clove, sliced Whisk and set aside.

  2. Slice fish,place in a dish or bowl and then add garlic paste, salt, red chili powder mix and let it sit for 10 minutes.
  3. Heat half teaspoon oil in non stick pan, and add fish don’t crowd pan, and cook in 2 to 3 batches if pan can not accommodate all the fish in one go. Cook it for few minutes both sides till the colour changes from translucent to white or pink  then take out the fish set it aside in a plate.

  4. same pan, heat half teaspoon remaining oil and then add one garlic clove sliced once the flavor of garlic is released then add sliced capsicum saute for minute. Add frozen vegetable mix or fresh vegetables. 

  5. Add about half of the sauce and then mix it  together then cooked fish, and rest of the marinade once the fish added, then be careful during mixing the fish can break apart.
  6. Its depending on the gravy that preferred, add chicken stock and then bring to a boil. Add cornstarch slurry cornflour dissolved in water for  thicken the sauce. Taste it and then adjust salt and spice as you need.
  7. Serve it with hot brown rice or white rice as you want and  then garnish with sesame seeds and spring onions also.

Recipe Notes


If you are using a mixture of vegetables, then add ones that take more time to cook. For instance, add onions and carrots first followed by the capsicum, broccoli and green beans. Add the corn right at the end vegetables can be used include onions, capsicum, broccoli, and carrots, green beans, cabbage, and corn.
