Chicken Box Patties


How to make testy Chicken Box Patties?

Made with samosa sheets or spring roll wrappers they are filled with chicken, cheese and vegetables and fried golden brown. Make  their shape like square box patties. The filling of   chicken and cheese box patties similar to puff pastry. I start off with a roux white sauce  which I add boiled and shredded chicken, capsicum & cheese then season it with salt, white pepper and red chili.

A Question.   Can we play around with the filling ?
Answer is...   
                     Yes, we can! In recipe, I have used chicken, capsicum, corn and cheese. But in past 
                     I have skipped corn, added black olives and green chilies. Some options I suggest are:

 patties are only fried for a few minutes avoid putting raw meat. Skip vegetables, Such as carrots, black olives, green chilies or broccoli. If you want to use large vegetables like broccoli or carrots, make sure finely chopped. Pulsing them processor for a one mint. if you want more twist then add taco seasoning for a Mexican twist.
  • 2 tablespoons butter
  • 1 teaspoon ginger garlic paste
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup boiled shredded chicken  seasoned with salt and pepper
  • 1 capsicum chopped
  • 1/2 cup corn
  • ½ - 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red chili  for taste
  • 4 tablespoon grated cheddar cheese
  • 1 packet samosa patties or wrappers
  • Oil for fryin

Instructions


  1. Heat butter in frying pan then add ginger, garlic paste and saute for a minute.

  2. Add flour and cook 30 to 45 seconds, while stirring constantly with  whisk.
  3. Add milk, bring to a boil on low to medium heat till thick mixture. Make sure whisk constantly so that there are no lumps in white sauce.
  4. Add boiled and shredded chicken, with the finely chopped capsicum and corn.
  5. Add salt, pepper, red chili flakes stir together. Taste this time, and adjust seasonings as required.
  6. Add cheese and stir till melts in the mixture.
  7. Set the mixture to cool when It will thick and then turn into a thick paste form as it cools In case mixture is too dry, add splash of milk and then make sure the mixture cools before start filling.
  8. Place flour in small bowl, add water to make thick paste. This will be work as a glue to close box patties you can use a beaten egg also.
  9. Take two samosa patties and put in a cross pattern,over the other.

  10. Place filling in middle and put flour paste on edges and then fold each of the edges one by one creating a parcel. Make sure completely closed.

  11. At this point, you can freeze box patties keep them in the freezer. 

  12. Heat oil deep fry the box patties till golden. Use a slotted spoon for take out box patties and then Serve with green chutney you can use ketchup also.

Recipe Notes


Samosa patties or samosa wrapper sheets can be found in supermarkets. They are in rectangle shape and can be found in the fridge or freezer section. If you did not find the samosa sheets or samosa wrappers you can also use spring roll wrappers  just cut them into rectangle shape and fold them over each other. When using samosa sheets are samosa wrappers make sure to cover them with a tea towel they don’t dry out.

Freezing Instructions:

Grease your  tray and lay out box patties one by one on it, making sure space between each one of them. Keep  in freezer for one hour or so till partially frozen when they are frozen, carefully remove them from the tray and place them in zip lock bags. For make box patties, take them out of the freezer and deep fry till golden.
